Apple Muffins

1 egg
¼ cup oil
½ cup sugar
½ teaspoon salt
1 cup grated raw apple, unpared
½ cup milk
1-1/2 cup sifted flour
2 teaspoons baking powder
½ teaspoon cinnamon

Heat oven to 400°. Line muffin tins with papers. Beat egg slightly. Add oil, milk and grated apple. Sift together dry ingredients. Stir liquid and dry ingredients together only until all flour is moist. DO NOT STIR UNTIL SMOOTH. Fill muffin cups 2/3 full. Sprinkle with Nut-Crunch topping (recipe below) and bake 25 - 30 minutes.

NUT-CRUNCH TOPPING

Mix together:
1/3 cup brown sugar, packed
1/3 cup finely chopped nuts
½ teaspoon cinnamon
