4 eggs, separated
5 tablespoons melted butter
1 cup flour
½ teaspoon salt
1 cup milk
½ teaspoon vanilla
1 tablespoon sugar
With an electric or hand mixer, beat the egg whites to a stiff peak. Beat the egg yolks separately, add the milk, vanilla and butter and mix well. Combine the flour, salt and sugar, and add to the egg yolk mixture. Mix until you have a thick, smooth batter. Using a rubber spatula, fold the egg whites into the batter VERY CAREFULLY. A few lumps are OK. DO NOT OVERMIX! Cook 3-1/2 to 4 minutes. Makes 8 to 10 waffles.
