Candy's Blueberry Crepes

8 oz pkg cream cheese
¾ cup blueberries
2 egg yolks
warmed apple butter
4 tablespoons butter, softened
1/3 cup sugar
grated rind from 1 lemon

Place cream cheese in a small bowl and allow to warm at room temperature. Blend in all other ingredients except the blueberries. Mix until smooth. Carefully fold blueberries into mixture and set aside while you prepare the crepes (recipe below). As you cook the crepes, spoon ¼ of the mixture onto each and roll up. Place on a large plate and glaze with warmed apple butter.

BASIC CREPES:
1 egg
3 T milk
2 T flour
Pinch of salt

Pour 1/4 c. batter into pan with melted butter or sprayed with Pam. Cook on high heat. Turn when top is dry. Makes 4 crepes.
