2 lbs. frozen bread dough, thawed
1 lb. chopped cooked broccoli
2 potatoes, peeled, diced and cooked until done
2 tsp. salt
1 tsp. pepper
2 tbsp. olive oil
Let dough rise for at least 1 hour covered. Mix together broccoli, potatoes, and salt and pepper. Add 1 tablespoon olive oil. Spread 1 tablespoon olive oil into large cookie sheet. Set aside. Gently roll loaf out onto lightly floured surface into a large rectangle. Repeat with other 1 pound loaf. Spread broccoli potato mixture evenly over each rectangle, to within 2 inches of edges. Roll up each one lengthwise. Carefully seal sides under. Place each onto cookie sheet. Bake at 375° for at least 30 minutes, or more, until bread is well browned on all sides.
