½ cup Miracle Whip or other salad dressing
1 lb boneless, skinless chicken breasts, cubed.
2 cups water
1 10-oz pkg frozen chopped broccoli, thawed and drained *
½ lb Velveeta cheese spread, cut up
2 cups uncooked instant rice (like Minute Rice)
Heat salad dressing in a large skillet. Add chicken. Completely cook chicken, about 8 minutes. Add water, broccoli and cheese. Bring to a boil. Stir in rice; cover. Remove from heat and let stand 5 minutes. Makes 4 servings.
*can use 2 cups fresh broccoli flowerets
