8-oz pkg cream cheese
3 eggs
1/2 cup applesauce
1/3 cup vegetable oil
1/4 teaspoon vanilla
1 chocolate fudge cake mix
1 lg box chocolate instant pudding mix
1 cup water
3/4 cup chocolate chips
Place cream cheese in a large mixing bowl to soften at room temperature for at least an hour. Preheat oven to 350 degrees. On low speed, cream the cheese until smooth. Add eggs one at a time while blending well into the cheese. Add oil and vanilla and blend well. Add half of the cake mix, and mix until blended. Add remaining cake mix, pudding mix and water. Mix until well blended on medium speed. Add chocolate chips and stir evenly into batter. Grease and flour muffin pans, or use spray oil, or paper muffin cups. Fill cups 3/4 full. Bake for 23-25 minutes for normal size muffins or 33-35 minutes for jumbo size muffins. Muffins are done when a toothpick inserted into middle of muffin comes out clean.
