1 pkg chocolate cake mix *
1 cup mayonnaise
1 cup water
3 eggs
Grease and flour 2 9" layer cake pans. In large bowl, beat eggs, then add water and mayonnaise and mix at low speed. Gradually add cake mix to liquid ingredients, and once blended, beat on medium speed 2 minutes (or 300 strokes by hand). Pour batter into prepared pans. Bake at 350° for 30 - 35 minutes or until cake springs back when touched lightly in the center. Cool in pans for 10 minutes. Remove layers from pans and cool on wire racks. Fill and frost as desired.
* Use the kind of chocolate cake mix that contains pudding in the mix. If you use a different kind of cake mix, reduce the mayonnaise to ½ cup.
