1-3/4 cups sugar
1/4 cup butter (1/2 stick)
4 eggs
2 lemons juiced & zest (yellow part of rind, grated) or 1/4 tsp dried lemon peel
1 pkg frozen raspberries
1 pkg frozen tart shells
Preheat oven to 350 degrees. Mix sugar & butter until creamy. Add one egg at a time, mixing each one. While stirring, add lemon juice & zest. Pour into tart shells, garnish with frozen raspberries to top (or mix into lemon mixture) and bake until set, approximately 25 minutes.
