Classic Louis Dressing

1 cup mayonnaise
1/2 cup chili sauce
1 tbsp fresh parsley, minced
1 tsp fresh lemon juice (not bottled
1 tsp prepared horseradish
1/2 tss grated onion
1/8 tsp salt
1/8 tsp pepper

Stir ingredients together. Cover and chill. Makes 1-1/2 cups.

NOTES: This is the classic dressing used in the San Francisco Bay Area for Crab Louis and Shrimp Louis, which is basically a tossed green salad with seafood added. The salads always include wedges of tomato and hard-boiled egg and green onions. The flavor is very versatile. Good as a salad dressing or dip, wonderful with boiled shrimp as an alternative to ketchup-based dips, and fantastic with Onion Blossoms.
