Saute: 1 minced onion, ¼ cup chopped parsley and 1 clove finely minced garlic.
Salt, pepper and flour a 1 or 2-lb. tenderized round steak.
Mix together: onion mixture, ¼ cup tomato juice and 1 cup pre-cooked wild rice.
Place rice mixture on steak and roll up. Fasten with skewers.
Brown meat in a Dutch oven with some olive oil. Add 2 cups tomato juice or red wine (or a combination of both). Cover and cook on very low heat for 1-1/2 - 2 hours until tender.
