Basic Muffins

1 egg
¼ cup oil or melted shortening
¼ cup sugar
1 teaspoon salt
1 cup milk
2 cups sifted flour
3 teaspoons baking powder

Heat oven to 400°. Grease muffin tins or use paper cup liners. Beat or whisk egg. Stir in milk and oil. Sift dry ingredients together and stir into liquid mixture just until flour is moistened. Batter should be lumpy. DO NOT OVER-MIX. Fill muffin cups 2/3 full. Bake 20 - 25 minutes or until golden brown. Serve warm. Makes 12 muffins.

SUNRISE CRUSTY MUFFINS:

Make muffin batter as directed above. Fill muffin cups ½ full. In a small bowl, mix ¼ cup sugar and 1 teaspoon cinnamon. Sprinkle half of the cinnamon-sugar mixture on top of muffin batter. Add remaining batter to muffin cups until they are 2/3 full. Sprinkle remaining half of cinnamon-sugar mixture on top of muffin batter. Bake as directed above.
