3 lbs red or new potatoes
1 pkg Italian dressing mix
1/3 cup olive oil
Cut potatoes up into bite-sized pieces, leaving the skins on. Place into a 9 x 13-inch baking dish and toss evenly with oil and dressing mix. Spread evenly in pan and bake at 450° for 40 minutes.
NOTE: In place of the dressing mix, you can use onion soup mix.
