Candy's Oven Omelet

1 dozen eggs
1 cup milk
1 teaspoon Mrs. Dash (original)
2 cups diced ham
½ cup diced tomato
2 cups shredded cheddar and/or mozzarella cheese
1 cup diced green onion
1 small pkg frozen shredded potatoes, thawed and drained

Beat eggs, milk and Mrs. Dash. Stir in ham, cheese, onion, potatoes and (if desired) tomato. Pour into a buttered 9" x 13" baking dish. Bake uncovered at 325° for 45 minutes or until omelet is set and top is golden brown.

NOTE: When preparing for a group breakfast, this casserole can be made up the night before, covered and stored in the refrigerator. In the morning, just take it out, uncover it and stick it in the oven!
