Candy's Herb-Roasted Potatoes Dijon
6 medium redskin potatoes (about 2 lbs), cut into bite-sized pieces
1/2 teaspoon Italian seasoning
5 tablespoons Dijon mustard
2 tablespoons olive oil
1 clove garlic

Prepare potatoes, leaving skins on. Place into a lightly greased 9 x 13-inch baking dish. In a small bowl, mix all other ingredients. Add to potatoes and toss evenly. Spread potatoes out in pan evenly. Bake at 425 degrees for 35 - 40 minutes or until potatoes are fork tender, stirring occasionally. Makes about 4 servings.
