1/3 c. flour
2 T. sugar
1/3 c. soy milk
3 large eggs
Preheat oven to 425°. Combine flour, soy milk, sugar and eggs in a bowl, whisking until smooth. Pour mixture into a medium non-stick skillet coated with cooking spray. Wrap handle of pan with foil. Bake 18 minutes or until puffy and golden. Top with fruit and sprinkle with powdered sugar.
