Raspberry Salsa Dip

Layer into a small casserole dish the following (starting with bottom layer):

1 can black beans (drained and rinsed)
1 8-oz pkg cream cheese
1 medium red onion, diced
1 16-oz jar raspberry salsa (or use recipe below)
1 lb. Monterey Jack cheese, shredded

Bake uncovered at 325 degrees for 20 - 30 minutes, until cheese is melted and dish is bubbly. Serve with tortilla chips.


Raspberry Salsa

2 cups diced fresh or frozen raspberries
¼ cup finely diced sweet onion
3 teaspoons finely chopped jalapeno chile peppers
1 clove minced garlic
¼ cup chopped fresh cilantro
½ teaspoon white sugar
3 tablespoons fresh lime juice or dry white wine like chardonnay

Blend ingredients thoroughly in a small bowl. Cover and chill in refrigerator at least 1 hour before serving.
