Sausage and Scalloped Potatoes

1 lb potatoes
2 tablespoons butter or margarine
½ cup chopped onion
¼ cup chopped bell pepper
½ lb polish sausage, sliced
1 cup grated parmesan cheese
4 eggs, beaten
1-1/2 cups milk
½ teaspoon salt
½ teaspoon dried leaf basil
1/8 teaspoon tobasco sauce

Cook potatoes, covered, in boiling salted water for 35 to 40 minutes until tender but not soft. Drain and cool. Remove skin and cut potatoes into 1/8-inch slices. Melt butter in large skillet, add onion and pepper and cook until tender. In greased 2-quart casserole or baking dish, layer potatoes, sausage, cheese and onion mixture, ending with a layer of potatoes. In a bowl beat together the eggs, milk, salt, basil and tobasco sauce. Pour over potato mixture. Bake at 375° for 30 minutes. Let stand about 5 minutes before serving. Makes 6 to 8 servings.
