3 large green bell peppers
Boiling water
1-1/2 cups cooked rice
¼ cup chili sauce
2 teaspoons salt
1 egg
1 lb ground beef
2 tablespoons finely chopped celery
2 tablespoons finely chopped onion
¼ teaspoon pepper
2 tablespoons shredded cheddar cheese
Cut peppers lengthwise. Remove stems, seeds and membranes. Add 2 teaspoons salt to enough boiling water to cover peppers. Boil 5 minutes. Drain.
Combine other ingredients except cheese. Mix well. Fill pepper halves with mixture and place in a baking pan with ½ and inch of hot water. Bake uncovered at 350° for 45 to 55 minutes. Sprinkle with cheese and bake an additional 5 minutes just until the cheese melts.
