1/2 cup packed brown sugar
1/2 cup chicken broth
1/4 cup lemon juice
2 tablespoons soy sauce
4 teaspoons cornstarch
3 cups cubed cooked turkey
1 ( 20 ounce ) can pineapple chunks packed in juice, drained
6 medium green onions, sliced
1/2 cup chopped red bell peppers
3 cups hot cooked rice
1/4 cup chopped peanuts
In medium-sized saucepan combine brown sugar, chicken broth, lemon juice, soy sauce and cornstarch; cook and stir until thickened and bubbly. Stir in turkey, pineapple, half of the green onions and bell pepper. Heat through. Serve with rice. Sprinkle with remaining green onions. Sprinkle with peanuts. Store leftovers covered in refrigerator; reheat to serve.
