Candy's Light and Luscious English Trifle

INGREDIENTS:
1 8-oz pkg Neufchatel cheese
2 cups milk
1 small pkg (4-serving size) banana instant pudding mix
1 angel food loaf cake
1 small tub low-fat Cool-Whip
1 tub strawberry Cool-Whip
2 cups sliced fresh strawberries
2 cups fresh raspberries (or thawed if frozen)
2 bananas

DO AHEAD:
Place cheese in a medium bowl to soften at room temperature. Slice strawberries and place in a small bowl with a little sugar. Cover and put in refrigerator until ready to use. Place Cool-Whip tubs in refrigerator to thaw.

When cheese is softened, whisk with an electric mixer on medium speed until smooth. Add ½ cup of the milk and continue mixing until well-blended. Add pudding mix and remaining milk and beat on low speed for 1 minute. Gently fold in the plain Cool-Whip until well incorporated with the pudding mixture. Set aside.

Slice angel food loaf cake into 8 slices, going across the cake. Cut each slice into 6 equal-size pieces. Set aside.

Slice bananas in ¼-inch slices.

Remove strawberries, raspberries and strawberry Cool-Whip from refrigerator and layer trifle in a trifle bowl as follows:

Evenly distribute 1/3 of the cake pieces in the bottom. Spread evenly ½ of the pudding mixture. Top with strawberries, spreading evenly. Distribute another 1/3 of the cake pieces. Spread evenly the strawberry Cool-Whip. Top with the sliced bananas, spreading evenly. Distribute the last of the cake pieces, topped with the last of the pudding mix and finally the raspberries. Cover and chill well before serving.
