Mom's Turkey Casserole

2 cups cooked turkey
1 pkg frozen mixed vegetables, thawed
1 large potato, peeled and diced
¼ cup butter
1 large onion, finely diced
1 green bell pepper, finely diced
1 can condensed cream of chicken soup
dash of pepper
pinch of thyme
2 cups Bisquick
milk

Cook vegetables and potato together according to directions on package of vegetables. Use a 4-quart saucepan or dutch oven.

Saute onion and bell pepper in butter. Add vegetables and simmer until tender.

Add turkey, soup, pepper and thyme. Mix well, and pour into a large casserole or 9 x 13-inch baking dish.

Mix Bisquick with milk as directed on package for dumplings. Spoon and spread over top of casserole. Bake at 350° for 10 minutes, then at 450° for 5 to 10 minutes until nicely browned on top.
