Slice 4 medium zucchini in half lengthwise. Boil 5 minutes. Remove zucchini from water and drain on paper towels.
In a small skillet sauté the following ingredients:
1-1/2 cups chopped onion
2 cloves finely minced garlic
1/2 cup finely chopped parsley
1 sausage link, diced
Cook slowly until onions are tender. Scoop out centers of zucchini and add to onion mixture. Cool slightly. Add one beaten egg and 1 heaping teaspoon breadcrumbs or croutons. Stir mixture, adding a dash each of salt and pepper, and refill zucchini shells. Top with 1 cup shredded cheese. Place shells in a baking dish and bake at 350 degrees for 35 - 40 minutes.
VARIATIONS:
Instead of a sausage link, you can add bacon, hamburger or another meat. Oregano may be added for an Italian taste or chili pepper for a Mexican taste.
