1 cup sugar
½ cup oil
2 eggs
1-1/2 cup flour, sifted
½ teaspoon baking soda
1/8 teaspoon nutmeg
1-1/2 teaspoons orange peel or flakes
½ teaspoon salt
1/8 teaspoon ginger
1 cup peeled and grated zucchini
½ cup nuts
In a large bowl, beat sugar, oil and orange peel until blended. Add sifted flour and other dry ingredients gradually until all is blended. Stir in zucchini and nuts. Bake in loaf pan in preheated 375° oven for 45 - 55 minutes.
NOTE: I have also added ½ cup raisins, stirred in with the zucchini and nuts.
